Beef with Broccoli

1 pound of beef, thinly sliced (I generally use flank steak)

½ cup cooking oil (olive is fine)
3-4 big cloves garlic, chopped
3 heads broccoli, chopped
Freshly ground black pepper

Sauce:
1 tbsp soy sauce
1 scant tbsp fish sauce (optional)
3 tbsp oyster sauce
1 tsp sesame oil

Mix sauces and sesame oil, add meat. Marinate for a couple hours, or overnight in the fridge.  If you use venison, marinate for 2-3 days. 

Heat oil in big skillet or wok until smoking (you want to keep your heat cranked up as high as it will go). Add meat (expect lots of splattering). Fry stirring briskly until meat is about halfway done. Add garlic and broccoli (you don't want garlic to burn). Cook stirring frequently until broccoli is al dente. Season with black pepper. Total cooking time is 3-5 minutes.

I recommend using a reduced sodium soy sauce so your dish doesn't come out too salty. Also, a tablespoon or two of Sriracha is awesome in the sauce if you like your food with a little bit of a bite.
