Mashed cauliflower

1 head cauliflower
handful fresh garlic (optional)
butter
sour cream
parmesan or other hard, white cheese, grated
salt & pepper

Steam cauliflower and garlic until cauliflower is al dente.  Do not overcook.  Drain well (the less liquid in the final product the better).  Mash by hand or with a boat motor.  Add remaining ingredients, adjust seasonings, and serve.

Crumbled bacon or chopped scallions/chives would also be good in this.  If you don't mind blasting your co-irkers and friends with vile breath, throw in a clove or two of minced raw garlic at the end.
