Lazy-Ass Carnitas

3-4 cloves garlic, minced
1-2 teaspoons ground cumin
couple pounds of pork loin or tenderloin
1 can of El Pato (yellow can- see image below!)
Salt & Pepper

Throw the whole mess into a crock pot and cook until meat shreds easily with a fork (on low for 6-8 hours...or on high for half that time). Adjust seasonings and serve with corn tortillas and the necessary accoutrements:

lettuce
cheese
cilantro and onions
tomatoes
guacamole
salsa
sour cream
etc etc etc

I usually stick with a corn tortilla and top it with cilantro, tomatoes, and onions, unless I have guests. The meat is so flavorful that cheese and the other fatty stuff really doesn't add a whole lot.  The only downside is that eating raw onions gives you a major case of vampire breath...but that might be a good thing if you want to keep unsolicited Romeos away.
