1 16-oz package black beans, rinsed well
4 garlic cloves, minced
4 tsp. ground cumin
1 1/2-2 tsp. salt
6-7 cups hot water
freshly ground black pepper
Throw everything into a crock pot and cook on low for 6-8 hours or high for 3-4 hours, or until beans are tender. Serve topped with chopped tomato, cilantro, red onion, avocado and crumbled cotija cheese, if you have it. Also good with sour cream or a squeeze of lime juice.
mmmm... plenty of cumin.
