Wheat Berry & Tomato salad

1 cup wheat berries
1/2 chopped sweet onion
1 clove garlic, minced
4 tomatoes, chopped
1/4 to 1/2 bunch of parsley, chopped
chopped mint or basil, optional
1/4 cup balsamic vinegar
1/4 cup olive oil
freshly ground black pepper

Soak wheat berries overnight.  In a large saucepan, bring 6 cups of salted water to a boil.  Add wheat berries and cook for 45 minutes to an hour.  Drain.  In a medium bowl whisk together balsamic vinegar and olive oil.  Add the wheat berries while they are still warm (it helps absorb the flavor of the oil and vinegar).  Add the herbs, onion, and garlic.  Mix well.  After mixture has cooled, add tomatoes.  Season with black pepper.

    I loved this when I had it at your house. Very substantial but refreshing at the same time.
