Indian Tea (Chai)

INGREDIENTS
Strong black tea (2 teabags-I prefer PG Tipps)
Fresh ginger root (about the size of the first joint of your thumb)
1 Star anise
2-4 Cardamom pods
1 Cinnamon stick
2-4 Cloves
4-6 Peppercorns
1 cup Milk
1 cup Water
Sugar or honey (optional)

Crush spices.  Mix 1 part milk and  1 part water in a medium saucepan (this will make 2 cups of tea).  Add black tea (1 tea bag per cup of liquid) and spices.  Bring to a boil and simmer 5-10 minutes until mixture is caramel colored.  Strain and flavor with sugar or honey, if desired.
